Guar gum is extracted from Guar beans, commonly known as Cluster bean seeds. Guar seeds are collected from the pods, broken to separate the germ from endosperm, de-husked to remove the outer fibrous skin, polished and milled into coarse or fine-grained powder. Guar gums are used as thickening and stabilizing agent in various industrial applications including food industry. Processing techniques of Guar gum production varies for each product usage. Split endosperms of Guar seeds are pre-hydrated to obtain the required rate of hydration in final product. Pre-hydration helps in reducing the heat generation during grinding process. Soaked splits are then flaked, ground and sorted by the particle size. Quality of food-grade Guar gum is determined by the rate of hydration, size of granules, microbial content and viscosity development.

Guar gum powder is either fine or coarse in texture, free flowing, off white in colour, with thickening capacity eight folds higher than that of corn flour.
